Cream Puff!
One day Erin said she is going to make something really difficult and of course comparing to what I make it is always difficult. It turned out she made 6 cream puffs (she said the recipe should make like 10 but we got 6 finally)They are so good! It is bakery level (and I like to ordinary cream ones more, the one with chocolate is very rich but indeed I like them both) and Erin had a though time making the whip cream to foam... it became watery and look gross (that's why we still need to read the instructions when you are not using the brand but the same thing) ^__^

Best ever quiche, and by the way, we did eat these four months
Erin declared that she was going to make me quiche for breakfast last night and I expected that would be something like I had a couple times. When I saw her making it it looked like a pie more than a quiche.
The most time-consuming part is absolutely the crust, which took her half an hour. The content part is egg, cheese and bacon. It tastes so good and I want to make an egg custard version of it, which will be an imitation to my favorite food in Hong Kong - egg tart.
And we did eat these days - we just didn't have time to renew out blog. Our apologies for not doing our work. Here is the recipe of the quiche:
Erin's Quiche Lorraine
Mix 1 1/3 C flour with 1/2 t salt. Cut 1/2 C Crisco vegetable shortening into the flour until the mixture resembles the texture of tiny split peas.
Add 3 T ice water and combine with a fork. Quickly gather the dough into a ball and flatten into a 4-inch-wide disk. Wrap in plastic, and refrigerate 30 minutes.
Using a floured rolling pin, roll dough disk on a lightly floured surface from the center out in each direction, until it forms a 12 inch circle. To transfer dough, fold dough in quarters then place dough point in center of pie pan and unfold dough.
Gently press against bottom and sides of pan. Trim overhanging edge of pastry about 1 inch from the pie plate's edge. Flute the edge. Refridgerate while preparing filling.
Break 4 eggs into a bowl. Add 1 1/3 C cream and a pinch of nutmeg, a pinch of sugar, 3/4 t of salt and 1/4 t of pepper. Beat until well mixed. Rub shortening over pastry and sprinkle with 6 slices of bacon, crisp fried and crumbled. Then sprinkle with 1 1/3 C shredded cheese. Pour egg mixture on top. Bake at 220 C for 12 min. Reduce heat to 150 C and continue baking until a knife in the center comes out clean. (Another 12 minutes).

Taco Salad by Erin
We invited the Watanabe's to come over and have dinner with us. Erin made this taco salad which is very unique to all of us. We saved some for Makiko. These Fritos were saved for a long time and being denied from Felix's access. Finally Felix could eat it and he liked it a lot (OK it is Felix writing this.)

Welcome back at LaLantern
I came back on Sunday and was totally dried out - I just didn't feel like cooking at all.
Erin agrees that we should go dining out and there are, still, restaurants around the area we live which we never visit before.
Here comes LaLantern, an Italian restaurant we had in our 'someday we are going to eat there' list for a long time.

Salad - The thing in the center is ham. It tastes like Chinese fried pork chop to me, of course the spice used is different. Surround the meat there are some white cheese which Erin likes a lot (it is very plain and has light smell)

Pizza - We chose the plainest kind which has only tomato sauce and onion and probably basil on the top. It is a little bit dry but I like it. Note that they have a pizza stove (or oven, or concrete pizza maker with a chimney, I don't know how to say) so the pizza is absolutely Italian.

Felix's coming back to HK for a while

Erin's Cabbage Rolls

Oh boy you must make us to cook this for you if you visit us. That is soooooo good. The stuff inside the cabbage is mixed minced meat (with probably 100 different kinds of meat probably - kidding, mostly beef I can say) and bacon on the top (supposed to be lenthy enough to roll the cabbage but stupid Felix didn't do the right thing [It's Felix writing this, by the way]).
It tastes heavenly good though. So two thumbs up... plus two toes - my wife rocks.

Erin's Scallop White Sauce Bake

Sorry about that funny name,... the recipe was in Japanese and I have no idea what the katakana word "コキール(kokiiru)" in there actually meant, so this one is pretty self explanatory anyhow! The cup it is in are something we have been collecting for months now and we have quite the stock! It is from our favorite pudding shop in Japan. (Same as the name on the cup) and these cups come with their cheese pudding. NO ONE should die before having tried that pudding!! Oh, and the stuff I baked in it was pretty good too. :)
I soaked the scallops in white wine before baking them, which made it really nice. There is broccoli in there too, but you can't really tell from this photo.

Erin's Welcome Pasta Salad

I am calling this that because I made a nice salad with all kinds of vegetables from our vegetable drawer and gave some to my two new colleagues at school. One is from Canada and the other from Michigan, USA. They both live downstairs and both just arrived this week, so I thought a nice salad would be a good thing to eat after a long day of flying! They were happy and Felix and I liked it too!

Japanese Mushroom Rice and Grilled Fish (Pike)

Wow, this was one of my most favorite baked rice dishes I have ever eaten. SO delicious! (Probably since the mushrooms were sauteed in butter before adding them to the rice! Haha)

Taos Tumble

Felix prepared some BBQ chicken for me and I put it into a salad. I didn't have ground cumin, so I tried using cumin seed instead- I think that is why it was a little bitter. Pretty good, though. Felix made his famous carrot and potato soup to go along with our meal. My former host family who lives in Nigawa are coming to dinner tonight, and he is making that delicious soup for them- let's see how it goes!

Erin's Spanish Quiche

Felix's Grandpa passed away
I just learned that my grandpa passed away peacefully on Mar 24, 2006 a while after 2:00am.
I have a combination of sadness and relieved to the news: The fact that I cannot be with him when he left made me feel despaired; but his repentance being a Christian after having a stroke about 3 years ago reassured me that we will see each other again.
I didn't have a chance to tell him I am having a very happy life here. I wish he could read this blog, showing the enjoyment of not just the place where I live, but the life that I live, has enriched, overflowed by God's blessing.
Grandpa, rest in peace.

Raw broccoli and cauliflower Salad
The first time I tried these vegetables raw - not too much different to the taste when it is done.
One thing amazed me so much is Erin got a recipe to make, yes make miracle whip, something we can't find here.

Oh my Gosh! I wish you can smell that, pal!
Again I am so so so so (x1000) amazed what Erin can make. Someday she might run a cooking school if she wants to. These are red bean paste buns and cream buns. I especially like the kuma (bear) shaped red bean paste bun in the top right hand corner but the tastiest one is the one on its left, Erin put some sesame on it and it is so nice. It is something to die for. I wonder when computer can deliver smell but I do wish I can blog the smell of this bread - it makes the apartment smells like heaven!
The bottom one is cream bun and it tastes very nice too!!

The unhealthiest food in the world
Hong kong readers you should know what it is. This is luncheon meat rice noodle with egg. I read it from the newspaper; this is one of the unhealthiest food in the world. It is comparable to French fries and donuts since you have to cut the luncheon meat into thin slices and fry them - you know how much unsaturated fat in that bowl then.
Erin had a retreat with church members and I needed to take care of my own breakfast. That's what I made! My Minnesota mom will be ethically against this food I am sure. But like any other unhealthy food in the world - it tastes grrrreat!!

Dear all,
For those who sent me warm messages, please accept my utmost thanks. I truly felt what is meant by "Unified in Christ", I am so moved.
The odd I encounter recently gets a little bit better. The editor of the magazine called me in person to reassure me the advertisement will go on and tell me I should be steadfast. What I thought is I could go to sleep, finally. I am sure friends and relatives all support me and prayed for me, thank you so much, my bretheren.

Somebody blackmailed me
As you might know I am running a website called 'Felix's Computer Help' (http://www.felixpc.com) after I quit my job here. I put an advertisement on a magazine called Kansai Time Out which is pretty popular among the foreigner's community. I like the ad a lot when I saw it launched last week.
OK here is the thing. Last night I got an email from a person called koden tomiden [koji.tomita@gmail.com] threatening me he has connections to stop me from putting the ad on the magazine because he has friends at the publisher and he said he can even bar me from working in Japan. I am so scared since this is the first time I felt like I am personally offended since I am here. I even found it hard to sleep last night, which is kind of rare.
Actually I know from the email address that the name of this person is somebody that I know. However since s/he sign his/her email with just a 'K' this is very unfair to that person if somebody impersonated him/her. I wish this is not him/her though.
Anyway I replied K an email saying I would appreciate a peaceful manner since I am not a yelling person anymore (Friends at Hong Kong know that I was kinda volatile when I was younger).
By the way, if you have time, I appreciate prayers if you remember us. And if you use the internet often, do come to my website and browse since the more people clicking into my newly borned website, there is more chance to get the site into search engines like google and yahoo. The website is far from good looking (my brother strongly agrees with me about that), please let me know if you have suggestions or inspiration to me.
I am so sure I am so blessed no matter where I am and that's why I am not scared now. I got blessing from my pastor Aunt Brenda who came over last week to see me with two more pastor friends. Mixed Veggie with Chicken
Oh my this is something to die for. I really like that and that's why I took a picture before we ate it. The recipe is easy: Two pieces of Chicken thigh, mixed veggie in a pack, garlic, sesame oil, soy sauce, Chinese rice wine, corn starch and a little salt. (OK, Viv, because of you I will write down that I have done ^^)
Tear the raw chicken thigh with your hand (yes, that's what I did, the chicken meat texture will then be reserved) and mix it with 1 tablespoon sesame oil, 1 tablespoon soy sauce, 1 tablespoon rice wine, 1/2 tablespoon of corn starch and a little salt; leave it for 1 hour.
Put some oil on the pan, prepare half a garlic by cutting into small cubes and throw it into the pan when the oil is hot; add some Chines wine to make it small very nice but don't burn the garlic. Put the chicken into the pan; stir it and add some water when you find it clot and too sticky.
Put the mixed veggie (or any vegetable you like) into the pan when the chicken is half way done (ratio? how much veggie do you want to eat, put it in) and stir and usualy the vegetable will give out water; add corn starch water if you want the sauce to be thickened.
Wish you guys can eat it with me, this dish will be served upon request... if you guys come over! ^O^

It's been half a year
In case you might not know. It's been half a year since we got married. Thank you Erin, thank you for the time. We certainly should be thankful to our Lord who is our cornerstone of our family, praise the Lord!!

Early Valentine's Day at Kyoto
We decided to have a celebration of Valentine's Day a couple days earlier. On Friday night we went to Kyoto for dinner. Erin booked (yes, she did) a table for two and we ordered a Valentine's Day set for two people (of course.)
Actually besides the dishes below we had fois grois too (goose fatty liver) but it looks pretty creepy so we don't show it on our blog. Anyway that is the first dish: Crab meat in the shell with heart-shaped egg. It is certainly romantic and cool to start with! (No idea how they make that egg though)

New Hairdo!!!

Spinach Bread by us
Making bread is time consuming. We wonder what time bakers wake up everyday.
Last time when Erin finished making the last bread she said it will take a long time for her to do that again. And suddening one day she came up to me saying that she wanna do that again - with me. That would be something I like to.
Making bread is fun but dough is something driving me totally crazy. That sticky feeling never goes away from my mind even after the bread is done. When we stirred the green grounded spinach into the dough it looked like cough syrup. We are glad that it looked nice finally.

Tonkatsu spree
Well when you have only two people in the house it will be a waste to make too many dishes for meals. There is just no way to finish them even in multiple meals and oftentimes food will end up dumped, which is kinda sad.
That's why sometimes we make tonkatsu (rice in a bowl) instead of a full meal. Let me introduce my dori katsu (chicken rice in a bowl) HK ver: The secret all about the preparation of the chicken meat, and let me tell you how... oh sorry I forgot since I never follow recipes! This is my original and I forgot what I had done right away so I could never make the same thing again! :P

I hate resintallation...
I have been busy these days migrating my old computer to a new one. My old, tiny and cute white box finally started to reboot on itself and act funny.
Got a real cheap server computer barebone (case + motherboard) from Yahoo auction and add stuff that I wanted for a long time (PentiumD, 2G RAM, DVD writer, display card, TV tuner... I don't want to make it too technical here), it turned out great.
The problem came when I have to figure out where I got my documents are (they are everywhere and chaotic) and this is such a pain! Now I am still having my old computer here untouch since I have no idea when I realize I got something else inside. T_T

Kabocha (pumpkin) Meal
When we were at Kyoto last time we went to a creative food store and tried something similar. It was so expensive and I swore I have to make it by myself. So here it is! Mix boiled pumpkin with minced meat, cheese and bread crumb; roll into balls and then in in bread crumbs again, then beaten eggs, and finally another layer of bread crumb. The ball should be able to hold up upon frying. That's it.

The top one is chocolate coffee (my favorite this time), the left bottom mango (ya I found mango in a can here) and the right bottom strawberry (I put too much dried strawberry in there and it gets too sweet)

We went to Kyoto for red leaves
I know the Japanese test is coming.
I know I am marginal (actually, far from being marginal).
But we decided to go there and we didn't regret spending a day at Kyoto again.
We walked two pages (on the map we have) for like 1 1/2 hour before we realize there is a train station (Keian, a company that I have never heard of) pretty close. The place is called Tofukuji, a temple famous enough to make the map having "red leaves" next to its name.
We arrived there at around 3:45 and they stop selling entrance ticket at 4:00. Whew!

Shrimp upside down sushi
The way making it is easy to imagine. Just get some sushi rice, nori sea weed, shrimp, cucumber and black sesame. Get a pan and put the shrimp at the bottom, put rice then cucumber, then sesame and sea weed, and finally rice. Put some pressure on it and make it compact. Turn the pan upside down and serve in a plate - and the beautiful food is done!

It's pizza from scratch!
I can't believe it! My wife can do such amazing cooking!
We cannot find pepperoni and crust here so I was all the way thinking it is just too hard to make it when Erin said she wants to. Anyway we went to grocery store and bought anything similar like replacing sausage with chicken.

Caramel Raisin Bread
Erin constantly amazed me using her oven.
She usually do that for breakfasts (ya the bread is big so we could eat it 4 days in a row) but she made it at night! It smells so good so it became our night snack as well and finally after 2 days the whole thing was gone.

12280 yen computer!
Does it look good? It cost me just 9800 yen!! It comes with a Celeron 533 (which is pretty slow but works) and a crisp LCD screen! Everything works and it can handle word precessing and web surfing without any problem!
I gave this computer some little upgrades and it gets even faster now!
Pentium III 700 processor for 1680 yen
128 MB SDRAM for 800 yen
So it costs me just 12280 yen!! (which is 103 US dollars or 802 HK dollars)

Farewell at Irish Bar
We have two of us leaving and boss said we are going to an Irish Bar to farewell them. It was fun - really fun to see a Canadian and a Hawaii-borned Japanese fighting, with the topic Budweiser is the best beer of the world. My Japanese boss has an American core and got very "patriotic" where the leaving Canadian announced "American beer sucks."
So finally they have a pretty technical "dicussion" about marketing (exposure of American and Canadian beer in Japan grocery stores), Microbiology (alcohol content in beer and how microbrewers works) and politics (The fact that my boss loves the US and the Canadian just hates it and why).
Finally somebody ordered an Irish beer and it became the best beer ever, that's it.

You will never run out of English typo jokes when you are in Japan and this is our center of fun-making for the whole night. We have a Canadian here and his unique way pronouncing "Harf and Harf" is so hilarious!

Erin's curry chicken rice
It looks dawn nice isn't it? And it tastes so good too! Japanese curry, chicken, carrot and onion makes this curry so delicious and revived me from being frozen (ya it is getting cold here now).

Donut time!
Erin strongly opposes putting it to the blog but I don't care - we had fun making that. Ya we made donuts which looks funny. These are some of those in more "regular shape" hey but let me tell you once more time - we had fun, and having fun is very important. This is a chocolate donut (in case you find it hard to figure out) and the bottom one is orange.
